First things first, you’ll need to make some cannabutter to infuse the delicious cheesecake with cannabis. If you need some guidance, you can refer to our blog that walks you through the process.
Step 1: Preheat oven to 175°C.
Step 2: Grease springform pan with butter.
Step 3: Crumble the digestive crackers into a bowl. Use a pestle and mortar to really break it down, of you could use a food processor. Gently melt cannabutter and butter in a saucepan over low heat; pour over crumbled crackers and mix. Transfer the mix to the springform pan and press the mixture into the bottom of the pan. Make sure the bottom is evenly covered, and - optionally - you can create a small upstanding rim against the sides of the pan.
Step 4: In a clean bowl, mix the sugar with cream cheese until smooth. Add milk and one egg, stir, then pour in another egg, stir, and so on until all the eggs are in the mixture. Now, add sour cream, flour, and vanilla; stir until smooth. Pour the mixture on top of the digestive cookie base present in the springform pan.
Step 5: Place the springform pan in the oven. After an hour, turn the oven off, and let the cheesecake sit there for 5 hours. This will prevent it from cracking. After 5 hours, place it in the refrigerator.
Step 6: Melt the chocolate in a saucepan. Add about the same amount of heavy cream as there is chocolate, and stir until you have a smooth mixture. Pour on top of the cheesecake into a shape of a cannabis leaf, and it’s ready for serving.
Note: The cheesecake lasts 5–6 days in the fridge and 6–8 months in the freezer.
